This recipe is my specialty; no one makes meat loaf for one this way. Try it and love it.
1 egg, beaten
¼ cup of frozen corn
¼ cup season dried bread crumbs
1 teaspoon Dijon mustard
1/8 dried thyme
4 ounces of ground beef
2 ounces bulk pork sausage
1 to 2 teaspoons of ketchup
In a bowl, combine the egg, corn, bread crumbs, mustard and thyme. Add meat to the mix as well. Shape your mix in your baking pan. Bake uncovered for 15 minutes at 350 degrees. Drizzle ketchup and continue to bake for 20 minutes or until meat is no longer pink.
