It’s almost time for the NBA Finals and we, as former athletes and sports junkies, love throwing meat on the grill. Now this ain’t your store bought barbecue sauce. This is for Big Fellas Only! This Texas-style barbecue sauce will awaken the taste on any level of grilled chicken, beef or link. This means that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid and southwest. The combination of sweet and tangy flavors brings out the absolute best in grilled or smoked pork and chicken.
•1 cup/240 mL prepared yellow mustard
•1/2 cup/120 mL sugar
•1/4 cup/60 mL light brown sugar
•3/4 cup/180 mL cider vinegar
•1/4 cup/60 mL water
•2 tablespoons/30 mL chili powder
•1 teaspoon/5 mL black pepper
•1 teaspoon/5 mL white pepper
•1/2 teaspoon/2.5 mL cayenne
•1/2 teaspoon/2.5 mL soy sauce
•2 tablespoons/30 mL butter
•1 tablespoon/15 mL liquid smoke (hickory flavoring)
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Yield: Makes about 2 1/4 cups
Mix all ingredients except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes.
